Sunset Slaw:

1 head of organic red cabbage diced
2-3 organic red beets
3-5 carrots sliced thin. 
1 small red onion diced
Dressing:
Mix equal parts of organic apple cider vinaigrette
1 Tbs lemon juice
Salt & pepper

Mix ingredients and let marinate for a few hours before serving.


Egg salad (serves 2):

4 organic hard boiled eggs diced small
3 tbs of Avocado oil (use to moisturize egg salad and cut on mayo)
2-3 Tbsp Sir Kensington’s organic non-GMO Mayonnaise (use sparingly for mayo flavor)
1/2 stalk of diced celery
Diced red onion to taste.
1/2 tsp of dijon mustard
Dill seasoning to taste
Salt & pepper
Serve on a bed of organic lettuce with other fresh vegetables. 


Organic Penne with Vodka sauce:

Have ALL ingredients ready before starting. Note: Vodka is flammable. Be very careful pour out amount into a cup while keeping away from flames.

Cream need to be tempered by adding a little of the hot water from the pasta pot. (Cold cream will “break” the sauce!)

De-can your tomato paste before starting

Large pot of boiling water salted with pink Himalayan salt add DeCeco organic penne pasta. For pasta, you need a lot of salt in the water, but, salt to taste. 

Dice a lot of garlic (at least 5 cloves or more) and 1 yellow onion
Sauté in a pan on med heat in olive oil until onions are transparent (3-5 min)
Add two cans of Kirkland organic tomato paste and stir constantly
add a 1/4 cup of Kirkland organic bone broth and continue to stir for a minute or two
Add vodka CAREFULLY and cook for about 3-4 minutes until the vodka is completely absorbed and cooked down. 
Add tempered cream and stir constantly
add seasonings:
Salt and pepper
Oregano
Basil
Small pinch of cayenne pepper

Strain pasta but keep some of the moisture. Add cooked penne to the sauce and stir. Add a lot of parmesan cheese.

​     Organic Spaghetti Squash:

     Cut squash into 2” rings and remove seeds
     Coat with olive oil and season with:
     Salt & pepper
     Garlic powder
     Onion powder
     Bake at 400 degrees for 45 min to and hour.
     remove and let cool
     Use a fork and pull the strands of the squash from the skin into a bowl

Top with your favorite tomato sauce and cheese!

Blueberry Cream

1 cup of Costco organic frozen blueberries, defrosted
Top with 1/4 of Organic Valley Half and Half
1/4 tsp of cinnamon 
Vanilla Extract
Sweetener of choice
